Before the coffee beans are processed into coffee grounds, they need to be roasted.  Roasting is a process that greatly determines the quality of coffee drinks.  The roasting processing of coffee beans is adjusted to consumer demand. Several roasting levels consist of light roast (good roast), medium roast, dark roast (ripe roast). These three roasting methods affect the taste and color of the coffee grounds produced.

The purpose of roasting coffee beans is to produce compounds that form the flavor and aroma of coffee in the coffee beans.  The roasting process begins with the evaporation of the water in the coffee beans by utilizing the available heat and then followed by the evaporation of volatile compounds and the process of browning the beans.  In the roasting process, the coffee changes color from green or light brown to cinnamon brown then becomes black with an oily surface which is then ground into a powder.
