Sumberdem is a village in the Wonosari District, Malang Regency, East Java Province.  It consists of several Hamlet areas, namely Sumber Bracelet, Gerdu Laut, Sumberingin, Putuk Rejo, Ambya'an, Rekesan, Duren Gede, and Ngemplak.

This village is located at an altitude of 685 meters above sea level, and the coordinates are -8.05080 803'3” and 112.46420112027'5”.  The northern region is bordered by Wonosari Village, the eastern region is bordered by the Sumber Tempur Village, Jambuwer Village, Kromengan District border the southern region, and in the west it is bordered by Ampelgading Village, Selorejo District, Blitar Regency.

The name Sumberdem is taken from the Javanese language, which consists of two words source and dem/adem, which means cold spring.  Because the Sumberdem area has many cold springs, this spring is not widely known to the public, so it can become a new tourist destination that is still natural.  Around 90% of the people of Sumberdem make a living as coffee farmers.  In coffee processing, local people use all manual tools.  They also use a stove to roast coffee.  That way, the coffee produced from the furnace has a natural taste.

Coffee Post Harvest Process

The coffee process is carried out without the use of machines and water or processed naturally.  Coffee cherries are sorted by separating the fruit that is still red and the fruit that is green.  After the coffee cherries that have passed the sorting are picked, the fruit is immediately dried on a drying board along with the skin layer in the sun. The cherries are then inverted periodically to dry evenly.  With this process, the cherries will naturally ferment, and the outer skin will peel off by itself.  The taste produced from naturally processed coffee beans is usually very fruity or has a strong fruity taste, such as blueberry and strawberry, with a full body and low acidity.

The two most economically significant varieties of coffee plants are the Robusta and the Arabica; ~40% of the coffee produced worldwide is Robusta, and ~60% is Arabica.  Robusta beans contain 1.7–4.0%  caffeine, and Arabica beans contain 0.8–1.4% caffeine.
